Where does the water dripping out of your Air Conditioner come from?

The water dripping out is same as the water droplets which forms over a cold water bottle when it is placed outside the refrigerator. The moisture which is present inside the room gets condensed and comes out of the air conditioner as water. You may ask whether it is necessary to remove the moisture present inside the room. The answer is YES.

Our living condition is greatly affected by the moisture level in air. Our body gets cooled by sweating. Sweat evaporates by taking away the heat from our body. If the moisture content in the air is very high, body sweat cannot evaporate easily and so our body will not get cooled effectively. This makes us feel very uncomfortable. This is why we feel uncomfortable even in a cloudy day in coastal areas and sometimes after rain. This is all because of high levels of moisture in the air.

The substance which is used in an AC to give the cooling effect is called the refrigerant. The air to be cooled (the air present inside the room) is sucked by the machine.  Inside the machine, the heat is exchanged between the air and the cool refrigerant. The refrigerant takes away the heat from the air and the cool air is blown into the room again.

While the air is cooled by the refrigerant, the moisture present in the air gets condensed. This condensed moisture is the water which drips out of your AC machine.

In a humid day, you will find lot of water coming out of your AC than on a normal day. The need of Air conditioning for Electronics is explained here.
